Steps

1. Rinse the quinoa under cold water and drain. 2. In a small pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until quinoa is fluffy and liquid is absorbed. 3. While the quinoa cooks, heat olive oil in a skillet over medium heat. Add diced bell pepper and sauté for 3-4 minutes until softened. 4. Stir in chopped spinach and cook until wilted, about 2 minutes. 5. Add the cooked quinoa to the skillet, along with the mixed nuts, soy sauce, salt, and pepper. Stir to combine everything well. 6. Serve hot, topped with sunflower seeds if desired.
