1. Rinse the quinoa under cold water and drain. 2. In a small pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until quinoa is fluffy and liquid is absorbed. 3. While the quinoa cooks, heat olive oil in a skillet over medium heat. Add diced bell pepper and sauté for 3-4 minutes until softened. 4. Stir in chopped spinach and cook until wilted, about 2 minutes. 5.
