Steps
1. In a small bowl, mix orange juice, orange zest, honey, soy sauce, and a pinch of salt and pepper.
2. Heat olive oil in a skillet over medium heat.
3. Season the chicken breast with salt and pepper and place it in the skillet.
4. Cook the chicken for about 5-6 minutes on each side until golden and cooked through.
5. Pour the orange glaze over the chicken and cook for an additional 2 minutes, spooning the sauce over the chicken to coat.
6. In a separate bowl, combine salad greens, red onion, mint, cilantro, olive oil, and a pinch of salt.
7. Plate the chicken and drizzle any remaining glaze from the pan over it.
8. Serve with the fresh citrus herb salad on the side.
