Steps

  1. Pat the mackerel fillet dry and season both sides with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Place the mackerel skin-side down and cook for 3-4 minutes until the skin is crispy.
  4. Flip the fillet and cook for another 2-3 minutes until cooked through.
  5. In a small bowl, mix the minced garlic, chopped parsley, lemon zest, and lemon juice.
  6. Reduce heat to low, add butter to the pan, and swirl to melt.
  7. Pour the lemon herb mixture over the mackerel and spoon the sauce over the fillet.
  8. Serve immediately with your choice of side.
