
Steps
- Pat the mackerel fillet dry and season both sides with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Place the mackerel skin-side down and cook for 3-4 minutes until the skin is crispy.
- Flip the fillet and cook for another 2-3 minutes until cooked through.
- In a small bowl, mix the minced garlic, chopped parsley, lemon zest, and lemon juice.
- Reduce heat to low, add butter to the pan, and swirl to melt.
- Pour the lemon herb mixture over the mackerel and spoon the sauce over the fillet.
- Serve immediately with your choice of side.
