1. Pat the mackerel fillet dry and season both sides with salt and pepper. 2. Heat olive oil in a non-stick skillet over medium-high heat. 3. Place the mackerel fillet skin-side down and cook for 3-4 minutes until the skin is crispy. 4. Flip the fillet gently and cook for another 2-3 minutes until cooked through. 5. In a small bowl, mix minced garlic, chopped parsley, and lemon juice. 6. Remove the fish from the pan and plate it. 7. Spoon the lemon herb sauce over the fish. 8.
