Steps
1. Pat the mackerel fillet dry and season both sides with salt and black pepper.
2. Heat olive oil in a non-stick pan over medium-high heat.
3. Place the fillet skin-side down and cook for 3-4 minutes until the skin is crispy.
4. Flip the fillet and cook for another 2-3 minutes until cooked through.
5. Remove the fillet and keep warm.
6. In the same pan, add butter and minced garlic; sauté for 30 seconds until fragrant.
7. Stir in lemon juice, lemon zest, and chopped parsley.
8. Pour the lemon herb sauce over the mackerel and serve immediately.
