Pear and Goat Cheese Stuffed Chicken Breast

A savory and slightly sweet main dish combining tender chicken breast stuffed with ripe pears and creamy goat cheese, complemented by fresh herbs and a light balsamic glaze.

Steps

1. Preheat oven to 375°F (190°C). 2. Carefully butterfly the chicken breast by slicing it horizontally without cutting all the way through. 3. Season the inside and outside of the chicken with salt, pepper, and half the thyme. 4. Spread goat cheese evenly on one side of the chicken inside. 5. Layer the pear slices over the goat cheese, then sprinkle remaining thyme. 6. Fold the chicken breast closed and secure with toothpicks if needed. 7. Heat olive oil in an oven-safe skillet over medium heat. 8. Sear the chicken breast for 3-4 minutes on each side until golden brown. 9. In a small bowl, mix balsamic vinegar and honey. 10. Brush the glaze over the chicken and transfer the skillet to the oven. 11. Bake for 15-20 minutes until the chicken is cooked through (internal temperature 165°F/74°C). 12. Remove toothpicks, let rest for 5 minutes, and serve with the pan glaze drizzled on top.
