Steps

1. Preheat oven to 375°F (190°C). 2. Carefully butterfly the chicken breast by slicing it horizontally but not all the way through, creating a pocket. 3. In a small bowl, mix the cream cheese, shredded cheddar cheese, garlic powder, salt, and pepper. 4. Spread the cheese mixture inside the chicken breast pocket. 5. Place sliced pickles evenly on top of the cheese mixture inside the pocket. 6. Close the chicken breast and secure with toothpicks if needed. 7. Heat olive oil in an oven-safe skillet over medium heat. 8. Sear the chicken breast for 3-4 minutes on each side until golden brown. 9. Transfer the skillet to the oven and bake for 15-20 minutes, or until chicken is cooked through (internal temperature 165°F/74°C). 10. Remove toothpicks, garnish with fresh parsley, and serve warm.
