Steps
1. Heat vegetable oil in a large skillet over medium-high heat.
2. Add minced garlic and sliced onion to the skillet, sauté until fragrant and onions are translucent.
3. Add chicken slices to the skillet and cook until browned and cooked through.
4. In a small bowl, mix together soy sauce, rice vinegar, honey, salt, and pepper.
5. Pour the sauce over the chicken in the skillet and stir well.
6. Add the sliced pickles to the skillet and continue to cook for 2-3 minutes, until the pickles are heated through.
