Steps

1. Heat vegetable oil in a large skillet or wok over medium-high heat. 2. Add the sliced pork and cook until browned and cooked through. Remove from the skillet and set aside. 3. In the same skillet, add the onions and minced garlic. Cook until the onions are translucent and fragrant. 4. Add the potato cubes to the skillet and cook until they are golden brown and crispy. 5. Return the cooked pork to the skillet and stir in the soy sauce and oyster sauce. Season with salt and pepper to taste. 6. Serve the pork and potato stir-fry over a bed of cooked rice.
