Steps
1. Soak the moong dal in water for 4-6 hours or overnight.
2. Drain the soaked dal and blend with enough water to form a smooth batter.
3. In a mixing bowl, combine the moong dal batter with grated carrot, chopped spinach, and onion. Mix well.
4. Heat a non-stick pan over medium heat and pour a ladleful of the batter, spreading it into a circle.
5. Cook for 2-3 minutes on each side until golden brown. Repeat with the remaining batter.
6. Serve hot, optionally with a side of fresh yogurt.
