Steps

1. Rinse the quinoa under cold water and drain. 2. In a small pot, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. 3. Fluff the quinoa with a fork and let it cool. 4. In a large bowl, combine the cooled quinoa, black beans, bell pepper, corn, and avocado. 5. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. 6. Pour the dressing over the salad and toss gently to combine. 7.
