Steps
1. Rinse the quinoa under cold water and drain.
2. In a small pot, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
3. Fluff the quinoa with a fork and let it cool.
4. In a large bowl, combine the cooled quinoa, black beans, bell pepper, corn, and avocado.
5. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
6. Pour the dressing over the salad and toss gently to combine.
7. Garnish with fresh cilantro if desired and serve immediately.
