Steps
1. Preheat the oven to 400°F (200°C).
2. Rinse the quinoa under cold water and cook it according to package instructions (usually about 15 minutes).
3. While the quinoa cooks, chop the mixed vegetables and place them on a baking sheet.
4. Drizzle the vegetables with olive oil, sprinkle garlic powder, salt, and pepper. Toss to coat.
5. Roast the vegetables in the oven for 20 minutes, or until tender and slightly caramelized.
6. Once the quinoa is cooked, fluff it with a fork and mix in the lemon juice.
7. Serve the quinoa in a bowl, topped with the roasted vegetables and garnish with fresh parsley.
