Steps

1. Preheat the oven to 400°F (200°C). 2. Rinse the quinoa under cold water and cook it according to package instructions (usually about 15 minutes). 3. While the quinoa cooks, chop the mixed vegetables and place them on a baking sheet. 4. Drizzle the vegetables with olive oil, sprinkle garlic powder, salt, and pepper. Toss to coat. 5.
