Steps
1. Preheat the oven to 375°F (190°C). 2. Cut the top off the bell pepper and remove the seeds. 3. In a bowl, mix cooked quinoa, diced tomatoes, black beans, corn, cumin, paprika, salt, and pepper. 4. Stuff the bell pepper with the quinoa mixture. 5. Place the stuffed pepper in a baking dish, cover with foil, and bake for 25-30 minutes. 6. Remove the foil, sprinkle cheese on top (if using), and bake for another 5 minutes until cheese is melted. 7. Serve hot.
