Steps
1. Rinse the quinoa under cold water and drain.
2. In a saucepan, combine quinoa and water, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
3. In another pan, heat olive oil over medium heat. Add onion, garlic, and ginger; sauté until onion is translucent.
4. Stir in diced tomatoes, garam masala, turmeric, cumin, and salt. Cook for 5-7 minutes until the sauce thickens.
5. Add the cooked quinoa to the sauce and mix well. Cook for another 2-3 minutes to allow flavors to meld.
6. Serve hot, garnished with fresh cilantro.
