Spicy Egg and Potato Curry with Rice

Steps

1. Heat the vegetable oil in a pan over medium heat. Add the cumin seeds and let them splutter. 2. Add the chopped onions and sauté until golden brown. 3. Add the minced garlic and grated ginger. Cook for another minute. 4. Add the diced potatoes and cook until they are tender. 5. In a small bowl, mix together the turmeric powder, coriander powder, red chili powder, and salt. Add this spice mixture to the pan and sauté for a minute. 6. Add the chopped tomatoes and cook until they become soft and mushy. 7. Make two small wells in the mixture and crack the eggs into them. Cover the pan and cook until the eggs are cooked to your liking. 8. Serve the spicy egg and potato curry with cooked rice and garnish with fresh cilantro leaves.
