Steps
1. Using a spiralizer, create zucchini noodles from the medium zucchini. If you don't have a spiralizer, you can use a vegetable peeler to create thin ribbons.
2. In a blender or food processor, combine the ripe avocado, minced garlic, lemon juice, olive oil, salt, and pepper. Blend until smooth and creamy.
3. In a mixing bowl, combine the zucchini noodles with the avocado sauce, tossing well to coat.
4. If desired, add halved cherry tomatoes for extra flavor and texture.
5. Serve immediately, garnished with fresh basil leaves.
