- Steps of Preparation:
- Preheat oven to 350°F
- Cut potatoes into small cubes and season with garlic powder, salt and pepper and place them on a baking sheet and bake for 15-20 minutes until crispy
- Heat up a pan over medium heat and add olive oil
- Add salmon to a pan, adding preferred amount of salt and pepper to taste and cook for 4 minutes on each side
- Add spinach to the pan, season with salt and pepper and cook for 2-3 minutes until spinach is wilted
- Serve the salmon with the baked potatoes and spinach on the side
