Steps
1. Heat olive oil in a non-stick skillet over medium heat.
2. Add the diced potatoes and season with salt and pepper. Cook for about 10 minutes, stirring occasionally, until golden and tender.
3. Push the potatoes to one side of the skillet and crack the egg into the other side. Scramble it gently until cooked through.
4. Add the sliced banana to the skillet, mixing it with the potatoes and egg for about 2 minutes until warmed through.
5. Sprinkle the cheese over the top and cover the skillet for a minute until the cheese melts.
6. Serve hot, garnished with fresh herbs if desired.
