Steps
1. Preheat your oven to 375°F (190°C).
2. In a small pot, boil the diced potato in salted water until tender, about 10 minutes. Drain and set aside.
3. In a mixing bowl, mash the ripe banana with a fork until smooth.
4. Add the rolled oats, milk, shredded cheese, and the boiled potatoes to the mashed banana, mixing well.
5. Beat the egg in a separate bowl and then add it to the mixture, stirring until combined. Season with salt and pepper.
6. Grease a small baking dish with olive oil and pour the mixture into it, spreading it evenly.
7. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and set.
8. Allow it to cool for a few minutes before slicing and serving.
