Steps
1. In a small pot, bring 1 cup of water to a boil.
2. Add the whole grain cereal and reduce heat to low. Cook for about 5 minutes, stirring occasionally, until tender.
3. Meanwhile, in a separate pot, bring water to a gentle simmer for poaching the egg.
4. Crack the egg into a small bowl, then gently slide it into the simmering water. Cook for about 3-4 minutes, until the white is set but the yolk is still runny.
5. Once the cereal is cooked, remove it from heat and stir in olive oil, salt, and pepper.
6. Spoon the cereal into a bowl and top with sliced avocado and the poached egg.
7. Drizzle with lemon juice and garnish with fresh herbs before serving.
