
Steps
- In a small pot, bring 1 cup of water to a boil.
- Add the whole grain cereal and reduce heat to low. Cook for about 5 minutes, stirring occasionally, until tender.
- Meanwhile, in a separate pot, bring water to a gentle simmer for poaching the egg.
- Crack the egg into a small bowl, then gently slide it into the simmering water. Cook for about 3-4 minutes, until the white is set but the yolk is still runny.
- Once the cereal is cooked, remove it from heat and stir in olive oil, salt, and pepper.
- Spoon the cereal into a bowl and top with sliced avocado and the poached egg.
- Drizzle with lemon juice and garnish with fresh herbs before serving.
