Steps
1. In a small pot, bring water to a simmer. Crack the egg into a small bowl and gently slide it into the water. Poach for about 3-4 minutes until the white is set but the yolk is still runny.
2. While the egg is poaching, heat the olive oil in a pan and wilt the spinach for about 1-2 minutes.
3. In a bowl, layer the cooked quinoa or brown rice, wilted spinach, sliced avocado, and cherry tomatoes.
4. Carefully remove the poached egg and place it on top of the cereal bowl.
5. Season with salt, pepper, and drizzle with hot sauce if desired. Serve immediately.
