Steps
1. In a small saucepan, bring the vegetable broth to a boil.
2. Add the whole grain cereal and reduce the heat to a simmer. Cook according to package instructions until tender, about 10 minutes.
3. While the cereal cooks, heat the olive oil in a skillet over medium heat. Add the fresh spinach and sauté until wilted, about 2-3 minutes.
4. In a separate pot, bring water to a gentle simmer and carefully crack the egg into the water. Poach for about 3-4 minutes until the white is set but the yolk is still runny.
5. Once the cereal is cooked, season it with salt and pepper, and divide it into a bowl.
6. Top with sautéed spinach and the poached egg.
7. Optionally, sprinkle grated cheese on top before serving.
