Steps
1. In a small saucepan, bring vegetable broth to a boil.
2. Add the whole grain cereal and reduce heat to a simmer. Cook for about 5 minutes until the cereal is tender.
3. Meanwhile, in a separate pan, heat olive oil over medium heat and sauté fresh spinach until wilted. Season with salt and pepper.
4. To poach the egg, bring a small pot of water to a gentle simmer, create a whirlpool, and carefully drop in the egg. Cook for about 3-4 minutes until the white is set but the yolk is still runny.
5. Once the cereal is cooked, spoon it into a bowl. Top with sautéed spinach and the poached egg.
6. Optional: sprinkle with grated cheese or nutritional yeast for extra flavor.
