Steps
1. Rinse the quinoa under cold water.
2. In a small pot, bring vegetable broth to a boil, add quinoa, reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed.
3. While quinoa cooks, heat olive oil in a pan over medium heat.
4. Add minced garlic and sauté for 1 minute.
5. Add sliced mushrooms and thyme, cook until mushrooms are tender and golden, about 5-7 minutes.
6. Season mushrooms with salt and pepper.
7. Fluff the cooked quinoa with a fork and mix in the sautéed mushrooms.
8. Garnish with chopped parsley and sprinkle with Parmesan cheese if desired.
9. Serve warm.
