Steps
1. Preheat your oven to 375°F (190°C).
2. In a small bowl, mix the fruit jam and soy sauce until well combined.
3. Season the chicken breast with salt and pepper on both sides.
4. Heat olive oil in an oven-safe skillet over medium heat.
5. Sear the chicken breast for about 3-4 minutes on each side until golden brown.
6. Pour the jam mixture over the chicken, ensuring it's evenly coated.
7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C).
8. Remove from the oven, let it rest for a few minutes, then slice and serve, garnished with fresh herbs if desired.
