Steps
1. Preheat your oven to 375°F (190°C).
2. In a small bowl, mix the fruit jelly and soy sauce until well combined.
3. Season the chicken breast with salt and pepper on both sides.
4. Heat olive oil in a skillet over medium heat, and sear the chicken for about 3-4 minutes on each side until golden brown.
5. Transfer the seared chicken to a baking dish and pour the jelly mixture over the top.
6. Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
7. Let it rest for a few minutes before slicing, then garnish with fresh herbs and serve.
