Steps
1. Rinse the quinoa under cold water.
2. In a small pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed.
3. While the quinoa cooks, heat olive oil in a skillet over medium heat.
4. Add the sliced onion and sauté for about 5-7 minutes until golden and caramelized.
5. Stir in the fresh spinach, garlic powder, salt, and pepper. Cook until spinach is wilted, about 2-3 minutes.
6. Fluff the cooked quinoa with a fork and mix in the sautéed onion and spinach.
7. Drizzle with lemon juice before serving.
