Steps
1. Preheat your oven to 375°F (190°C).
2. Cut the top off the bell pepper and remove the seeds and membranes.
3. In a bowl, combine cooked quinoa, black beans, corn, diced tomatoes, cumin, smoked paprika, salt, and pepper. Mix well.
4. Stuff the mixture into the bell pepper until filled.
5. Place the stuffed pepper in a baking dish and cover with foil.
6. Bake for 25-30 minutes or until the pepper is tender.
7. If using cheese, uncover the pepper in the last 5 minutes of baking to melt the cheese on top.
8. Garnish with fresh cilantro before serving.
