Steps
1. In a small saucepan, bring the vegetable broth to a boil.
2. Add the rolled oats and garlic powder, reduce heat to low, and simmer for about 5 minutes, stirring occasionally.
3. Stir in the chopped spinach and cook for an additional 2 minutes until wilted.
4. Remove from heat and stir in the crumbled feta cheese. Season with salt and pepper to taste.
5. If desired, poach an egg in a separate pot while the oatmeal cooks.
6. Serve the oatmeal in a bowl, topped with the poached egg if using, and a drizzle of olive oil.
