
Steps
- Preheat your oven to 400°F (200°C).
- In a pan, heat olive oil over medium heat. Add the diced potatoes and sauté until they are golden brown and tender, about 10-12 minutes.
- Add minced garlic to the pan and cook for an additional 1-2 minutes until fragrant.
- Transfer the potato and garlic mixture to a small baking dish.
- In a bowl, whisk together the eggs, honey, salt, and pepper. Pour the egg mixture over the potatoes.
- Scatter the sliced olives on top.
- Bake in the preheated oven for 15-20 minutes, or until the eggs are set and lightly golden.
- Remove from the oven, let cool for a minute, and garnish with fresh parsley if desired. Serve warm.
