Stuffed Eggplant Turkish-Style (Paleo)

Steps

1. Preheat oven to 350°F. 2. Slice theeggplant in half and scoop out the flesh, leaving a 1/2 inch border. 3. Chop the scooped out flesh and set aside. 4. Heat the olive oil in a skillet over medium heat. 5. Cook the onion and garlic in the olive oil until translucent. 6. Add in the ground beef and cook until it's no longer pink. 7. Stir in the tomatoes paste, cumin, salt, and pepper. 8. Add in the eggplant pieces. 9. Place the eggplant halves in a baking dish, and fill with the meat mixture. 10. Bake in the preheated oven uncovered for 25 minutes. 11. Serve warm with a side salad.

- 1 eggplant - 200 g ground beef - 2 teaspoon tomato paste - 1 teaspoon cumin - 1/2 large onion, diced - 3 cloves garlic, minced - 2 tablespoons olive oil - Salt and pepper, to taste
