Steps
1. In a bowl, combine the lamb, chopped onion, minced garlic, cumin, paprika, ground coriander, olive oil, salt, and pepper. Mix well to ensure the lamb is evenly coated with the marinade.
2. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, allowing the flavors to meld together.
3. Preheat the grill to medium-high heat.
4. Thread the marinated lamb cubes onto the soaked wooden skewers, alternating with tomato wedges, green bell pepper chunks, and red onion chunks.
