Turkish Chicken and Mushroom Pilaf

This delightful Turkish-inspired dish combines tender chicken, earthy mushrooms, and fluffy rice, all infused with aromatic spices and fresh tomatoes. It's a comforting and satisfying main dish perfect for any occasion.

Steps

1. In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. 2. Add the minced garlic and diced chicken, cooking until the chicken is browned on all sides. 3. Stir in the sliced mushrooms and cubed potatoes, cooking for another 5 minutes until slightly softened. 4. Add the chopped tomato, paprika, salt, and pepper, mixing well. 5. Pour in 150ml of water, bring to a simmer, and cover. Cook for 15 minutes. 6. Meanwhile, rinse the basmati rice under cold water until the water runs clear. 7. In a separate pot, cook the rice according to package instructions. 8. Once the chicken and vegetables are cooked, stir in the cooked rice until combined. 9. Garnish with freshly chopped parsley before serving.
