Steps
1. In a medium saucepan, bring 1 cup of water and quinoa to a boil. Reduce heat to low, cover and simmer for 10 - 15 minutes, until the water is completely absorbed.
2. In a large bowl, combine tomatoes, olives, red onion and baby spinach.
3. Drizzle olive oil over the vegetables and season with oregano, salt and pepper.
4. Fluff the cooked quinoa with a fork and add to the bowl. Toss together.
5. Serve warm or chilled.
