1. Preheat your oven to 180°C (350°F). 2. Cook the pasta according to package instructions until al dente. Drain and set aside. 3. In a bowl, whisk the egg and mix in the crumbled feta cheese, shredded mozzarella, diced tomato, olive oil, salt, and pepper. 4. Combine the cooked pasta with the cheese and egg mixture, ensuring the pasta is well coated. 5. Transfer the mixture to a small baking dish. 6. Bake in the preheated oven for about 20 minutes, until the top is golden and bubbly. 7. Remove from the oven and let it cool slightly before serving. Garnish with fresh parsley if desired.
