Steps
1. Preheat the oven to 375°F (190°C).
2. In a bowl, mix together the chopped spinach, cream cheese, mozzarella, garlic, salt, pepper, and paprika until well combined.
3. Carefully cut a pocket in the chicken breast without slicing all the way through.
4. Stuff the spinach and cheese mixture into the pocket of the chicken breast.
5. Heat olive oil in a skillet over medium heat. Sear the stuffed chicken breast for about 3-4 minutes on each side until golden brown.
6. Transfer the chicken to a baking dish and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
7. Let it rest for a few minutes before slicing and serving.
