1. Preheat your oven to 375°F (190°C).
2. In a bowl, mix the chopped spinach, cream cheese, mozzarella cheese, minced garlic, salt, pepper, and Italian seasoning until well combined.
3. Carefully cut a pocket into the chicken breast, ensuring not to cut all the way through.
4. Stuff the chicken breast with the cheese and spinach mixture, securing it with toothpicks if needed.
5. Heat olive oil in an oven-safe skillet over medium heat. Sear the stuffed chicken breast for 3-4 minutes on each side until golden brown.
6. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C).
7. Remove from the oven, let it rest for a few minutes, then slice and serve.
