Steps
1. In a small saucepan, bring the water to a boil.
2. Add the rolled oats and reduce the heat to low, cooking for about 5 minutes until the oats are creamy.
3. Stir in the chopped spinach, cooking for another 1-2 minutes until wilted.
4. If using, poach the egg in a separate pot while the oatmeal is cooking.
5. Remove the oatmeal from heat and stir in the olive oil, garlic powder, salt, and pepper.
6. Serve the oatmeal in a bowl, topped with crumbled feta cheese and the poached egg if desired.
