Steps

1. Begin by sautéing the chopped onions with a tablespoon of oil for five minutes. 2. Add the potatoes and tomatoes and let them cook for another five minutes. 3. Crack the eggs and stir them in until the scramble begins to form. 4. Add the uncooked rice and stir it in for two minutes. 5. Cover the pan and let everything cook for about eight minutes. 6. Once the scramble is cooked, mix in the remaining tablespoon of oil. 7. Serve the "Scrambled Eggs Fried Rice" hot.
