Steps
1. Rinse the sushi rice under cold water until the water runs clear, then cook according to package instructions.
2. In a small bowl, combine rice vinegar, sugar, and salt. Heat until dissolved, then fold into the cooked rice. Let it cool.
3. Place a bamboo sushi mat on a flat surface and lay the nori sheet shiny side down.
4. Wet your hands and take a handful of sushi rice, spreading it evenly over the nori, leaving a 1-inch border at the top.
5. Arrange the cooked shrimp, cucumber, and avocado in a line across the rice.
6. Starting from the bottom, tightly roll the sushi using the mat, pressing gently to ensure it holds together.
7. Use a sharp knife to slice the roll into bite-sized pieces.
8. Serve with soy sauce, pickled ginger, and wasabi if desired.
