
Steps
- Heat olive oil in a skillet over medium heat.
- Add diced potatoes and cook until golden brown and crispy, about 5-7 minutes.
- Add black beans, corn, and cooked rice to the skillet. Stir well to combine.
- Sprinkle cumin, chili powder, salt, and pepper over the mixture. Stir again to evenly distribute the spices.
- Create two small wells in the mixture and crack the eggs into them.
- Cover the skillet and cook for about 5 minutes, or until the eggs are cooked to your desired doneness.
- Remove from heat and serve hot.
