Spanish Beef Stew

A hearty and flavorful beef stew inspired by Spanish cuisine.

Steps

1. Heat olive oil in a large pot over medium heat. 2. Add the beef chunks and cook until browned on all sides. Remove from the pot and set aside. 3. In the same pot, add the onion and garlic. Sauté until the onion is translucent. 4. Add the red bell pepper, potatoes, and carrot. Cook for a few minutes until they start to soften. 5. Return the beef to the pot and add the beef broth, tomato paste, smoked paprika, cumin, salt, and pepper. Stir well to combine. 6. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 1 hour, or until the beef is tender and the flavors have melded together. 7. Serve hot and enjoy!
