Spanish Potato and Onion Tortilla

Steps

1. Peel and thinly slice the potato and onion. 2. Heat olive oil in a non-stick skillet over medium heat. 3. Add the potato and onion slices to the skillet and cook until they are soft and slightly golden, stirring occasionally. 4. In a bowl, beat the eggs and season with salt and pepper. 5. Pour the beaten eggs over the cooked potatoes and onions in the skillet. 6. Cook for about 5 minutes, or until the edges of the tortilla start to set. 7. Carefully flip the tortilla using a large plate or lid, and cook for another 5 minutes on the other side. 8. Remove the tortilla from the skillet and let it cool slightly before slicing and serving.
