Steps
1. Peel and thinly slice the potatoes and onion.
2. Heat the olive oil in a non-stick skillet over medium heat.
3. Add the potatoes and onion to the skillet and cook until they are soft and lightly browned, about 10-12 minutes.
4. In a bowl, beat the eggs and season with salt and pepper.
5. Pour the beaten eggs over the cooked potatoes and onion in the skillet.
6. Cook for about 5 minutes, until the edges are set.
7. Carefully flip the tortilla using a large plate or lid and cook for another 5 minutes on the other side.
8. Slide the tortilla onto a serving plate and let it cool slightly before slicing.
9. Serve warm or at room temperature.
