Spiced Chickpea and Spinach Stuffed Sweet Potato

A warm, hearty vegan main dish featuring a baked sweet potato stuffed with spiced chickpeas and fresh spinach. It's a nutritious, flavorful meal perfect for a wholesome lunch or dinner.

Steps

1. Preheat the oven to 400°F (200°C). 2. Prick the sweet potato all over with a fork and bake directly on the oven rack for 45 minutes or until tender. 3. While the sweet potato bakes, heat olive oil in a pan over medium heat. 4. Add chopped onion and cook until translucent, about 3-4 minutes. 5. Stir in garlic, cumin, smoked paprika, and chili powder; cook for another minute until fragrant. 6. Add the cooked chickpeas and spinach; cook until spinach wilts and chickpeas are heated through. Season with salt and pepper. 7. Remove sweet potato from oven and let cool slightly. Cut it lengthwise and gently fluff the inside with a fork. 8. Spoon the spiced chickpea and spinach mixture into the sweet potato. 9. Squeeze a lemon wedge over the filling if desired. 10. Serve warm.
