Steps

1. Rinse quinoa under cold water. In a small pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until quinoa is fluffy. 2. In a frying pan, heat olive oil over medium heat. Add chickpeas, smoked paprika, cayenne pepper, garlic powder, salt, and pepper. Sauté for 5-7 minutes until chickpeas are slightly crispy. 3. Once the quinoa is cooked, fluff it with a fork and season with a pinch of salt. 4. Assemble the bowl by placing quinoa at the bottom, topped with sautéed chickpeas, fresh spinach, and sliced avocado. Drizzle tahini over the top if desired. 5. Serve warm and enjoy your meal!
