Steps
1. Preheat the oven to 375°F (190°C).
2. Cut off the top of the tomato and scoop out the seeds and pulp with a spoon.
3. In a mixing bowl, combine the cooked quinoa, chopped spinach, feta cheese, fresh basil, olive oil, salt, and pepper.
4. Stuff the quinoa mixture into the hollowed-out tomato.
5. Place the stuffed tomato onto a baking sheet and bake for 20-25 minutes, until the tomato is tender and the filling is heated through.
6. Serve hot and enjoy!
