Steps

1. Preheat oven to 200°C (390°F). 2. In a shallow bowl, beat the egg. 3. Mix the chopped nuts and breadcrumbs in another bowl. 4. Season the chicken breast with salt and pepper. 5. Dip the chicken into the egg, then coat evenly with the nut and breadcrumb mixture. 6. Heat olive oil in an oven-safe skillet over medium heat. 7. Sear the chicken breast for 2-3 minutes on each side until golden. 8. In a small bowl, mix honey and Dijon mustard. 9. Brush the honey mustard glaze over the chicken. 10. Transfer the skillet to the oven and bake for 12-15 minutes, until the chicken is cooked through. 11. Remove from oven, let rest for 3 minutes, then serve.
