Herb-Crusted Turkey Breast with Garlic Mashed Potatoes

Steps

1. Preheat oven to 200°C (390°F). 2. Mix olive oil, garlic, rosemary, thyme, salt, and pepper. Rub the mixture onto the turkey breast. 3. Place turkey breast in a baking dish and roast for 25-30 minutes until cooked through. 4. Peel and chop potatoes, then boil in salted water until tender (about 15 minutes). 5. Drain potatoes and mash with milk, butter, and a pinch of salt until creamy. 6. Let turkey rest for 5 minutes before slicing. 7. Serve sliced turkey breast with a side of garlic mashed potatoes.
