Spiced White Chickpea Curry

Steps

1. Drain and rinse the soaked chickpeas. 2. In a pressure cooker or pot, heat oil over medium heat. 3. Add the chopped onion and sauté until golden brown. 4. Stir in the ginger garlic paste and sauté for another minute. 5. Add the soaked chickpeas and mix well. 6. Sprinkle in the pepper powder, turmeric powder, chilly powder, and garam masala, stirring to coat the chickpeas. 7. Add the clove, cardamom, cinnamon stick, and star anise. 8. Pour in the tomato sauce and mix thoroughly. 9. Add enough water to cover the chickpeas and season with salt. 10. If using a pressure cooker, cover and cook for 3-4 whistles. If using a pot, cover and simmer until the chickpeas are tender, adding water as needed. 11. Once cooked, remove the whole spices and serve hot with rice or bread.
